In this video, I highlight some important differences between Gumroad vs Payhip vs Koji so you can decide which one is the best platform to sell digital products for your purpose. In a nutshell, the pricing/fee differences between Koji, Gumroad, and Payhip: Gumroad: 9% + 0.30c /transaction ($0-$999 in sales) (UPDATE FEB. 2023: Gumroad has removed the tiered fee structure and now charges a simple 10% flat fee no matter your sale volume) Payhip: 5% + PayPal/Stripe fees with options to upgrade to its monthly plans for reduced or no transaction fees. Koji: 0-10% (Depending on the app you use). Example: Tip Jar app is 0% while the Digital Download app is 5%. Some other things to know in addition to what I mentioned in the video... Koji is a link in bio service which built-in app integrations allowing your audience to purchase directly on your page. Gumroad seems to be a favorite amongst creators, especially with Twitter users from what I've observed. Anyone who purchases via Gumroad has all his/her purchases in their Gumroad account. Payhip has a clean and minimalist interface which is what I like. Even though you can use Zapier to integrate an email marketing services, on the Marketing page, you can directly integrate your account with email marketing service such as ConvertKit and Mailchimp. Its Store Builder is also a big perk that stands out. Weigh out your rice Rinse very well Place in a bowl full of water to soak for 12 hours take out of water and allow to drain in a sieve for 2 hours Steam rice for 50 minutes cool down to 105F Add your 1/4 cup of rice flower (that's been heated on a stove top and cooled) and .1 grams of koji spores for every pound of rice you use. In my case I used .5 grams of spores to 5 pounds of rice. Mix well and cover with cheesecloth Cover with plastic wrap loosely and place in fermentation chamber Your ferment chamber needs to be between 80-90F with humidity at 90%. Monitor the temp of your koji rice to make sure it's core temp doesn't get higher than 107. If id starts to rice you can gently mix it with clean hands. Your koji rice should be ready around the 48 hour mark. If you let it go to the 72 hour mark it may want to bloom and in this case you will make more starter seed for more koji rice.... This is my recipe for savoury, smokey, delicious umami rich vegetable charcuterie made using koji. This has an incredible flavour, it really is something special, simultaneously very meaty but still with the beautiful flavour of the vegetables too. I'll also show you how I use the vegetable charcuterie in a dish off my tasting menu at the end of the video. Full recipe bellow. DOWNLOAD MY COOKBOOK HERE - 🤍 More from me - PATREON - 🤍 WEBSITE - 🤍 INSTAGRAM- 🤍 TWITTER - 🤍 INGREDIENTS I USE & RECIPES - 🤍 TASTING MENU RESERVATIONS - 🤍 MY COOKBOOK - 🤍 Vegetable Charcuterie Recipe / Technique Cook the vegetables - you can do this with other methods but for consistency of doneness and moisture content I cook the vegetables sous vide at 85C for three hours (this might seem like a long time but it gives consistently great results). Smoke the vegetables - You can use whatever smoking method you prefer. I tend to use a small handheld smoking gun as I work on a relatively small scale and like the ability it gives you to use interesting unusual smoke flavours. The Botanical Cure (use at 2.85% weight of cooked veg) 70g Salt 20g Black Pepper 9g Juniper Mix the ingredients and blend to a fine powder. Add 2.85% weight of cooked vegetables at the curing stage and allow to cure in the fridge for 2-5 days. Remove the cured vegetables from the fridge and pat dry. Innoculate with koji spores - Mix 2g koji spores in 30g rice flour and sprinkle this over the cured vegetables. Incubate the vegetable charcuterie at 90% Relative humidity at 30C for 36 hours. Once the vegetables have a fine layer of koji weigh the veg and log its weight, then gently dry it either in a dehydrator or by ear dating until it has lost at least half its weight - even more for a more intense product. Finally optionally marinade the vegetable charcuterie in oil if desired to round out its flavour and add richness. Umansky also forges throughout the Cuyahoga Valley, allowing Sawyer to serve seventy species of wild fungi and use over 180 wild plants that grow in the region at Trentina. He cooks at Trentina several nights a week, and oversees Team Sawyer’s entire pasta-making program. Crumble the dehydrated rice-koji sheets. Mix in the coarse salt. Add water to cover the koji, and mix well. *Dehydrated koji absorbs a lot of water, so check on it after a few hours. If it has swelled and absorbed all the moisture, add a little more water. 2. Cover with the lid, and leave out at room temperature for 5 to 7 days. Mix it up well with a spoon at least once a day. 3. When the koji have broken down, become creamy with mild smell, it means the shio-koji is ready. Transfer the container to the refrigerator. Syoyu-koji (Soy sauce-koji) 【Ingredients】 200 grams Dehydrated koji sheets or rice-koji spores 200~250ml Soy sauce (enough to cover) 【direction】 1. Crumble the dehydrated rice-koji sheets.
