Thanks For Watching. Subscribe: 🤍 Saffron (pronounced /ˈsæfrən/ or /ˈsæfrɒn/) is a spice derived from the flower of Crocus sativus, commonly known as the "saffron crocus. saffron originated in Iran. Kashmiri saffron is the rarest and the most expensive form of saffron available in the world. The reason for this is its limited production of just over 2000 kgs, which is very less as compared to other producers of saffron. Saffron comes from the saffron crocus bulb (Crocus sativus), which is an autumn blooming crocus. The spice is actually the red stigmas of this crocus flower. Each flower will only produce three stigmas and each saffron crocus bulb will only produce one flower Total world production of saffron is around 300 tons per year. Iran, India, Spain and Greece are the major saffron producing countries with Iran occupying the maximum area and contributing about 88% of world's saffron production The total area under saffron cultivation in J&K is 3715 ha with production and productivity of 16 MT and 3.0 – 4.0 kg/ha, respectively. Saffron in J&K is primarily cultivated 86% saffron farming system in heritage site of Pampore over 3200 hectares. Important points for Saffron farming Soil & Climate The plant Crocus Sativus thrives in the soil which is calcareous(rich in sodium carbohydrate) and is well-drained and rich in humus. It can also grow in dry or semi-dry soil provided it is well-drained. The ph of the soil should be between 6 and 8. It can be grown in areas with 35-40 degrees celsius in summer to -15m to - 20-degree celsius in the winter. It requires dry temperature for maximum yield. Land Preparation It is advised to plough the land twice to bring it to a fine tilth. The beds should be loose and airy for the plants to be planted firmly. The best time for plantation is considered between July to August. The flower starts to appear in October while the flower fully blossoms in the winter seasons. Plantation The soil should be dug and a pit should be made of depth 15 cm, the distance between the pits should be between 10-12 cm. The plants are planted into the pits and then are covered with soil. Irrigation should only be provided during an extended spell of a dry period and should be avoided otherwise. Grubbing It refers to the process in which saffron plants are completely detached from the mother corns and are stored for the next season. Saffron corn is generally fit for growing saffron for 4-5 years and therefore grubbing should be done accordingly. Harvesting Saffron The saffron bloom occurs during October-November and the flowers should be plucked before the wilting of the petals. The plucking should always be done at dawn to extract the highest quality of saffron. Drying Saffron A very important process as the leaves are dried and the saffron is extracted. The process is delicate as the temperature should be between 55-60 degrees Celcius/the process aims to dry the threads but not to over-dry it. After the process, Marketing of Saffron The marketing for saffron is easy as compared to other spices due to its various uses. It can be used in various industries like medicine, alcohol, dairy and tobacco. We have to keep in mind that long unbroken thread fetch more money and the final revenue generated also depends on the drying process.

But people are mostly just interested in the flower of the Saffron Crocus (Crocus sativus) - and not even the whole flower. Just the bright red threads that make Saffron Spice. I'm not a great gardener of Saffron Crocus, not by a long shot. But I like that they are almost a wildflower. They can take care of themselves. And their season of flowering is the opposite of most crocus. Saffron crocus flower in the autumn, instead of the spring. Here in western Oregon, the leaves and flowers start coming up in late October. Saffron Harvest - Picking the Flowers Some folks say to harvest the Saffron threads before the flowers open up. Other folks say to harvest them a few hours after the flowers open. Honestly, between the two, I can't tell any difference in the quality of the Saffron Spice. I just pick flowers as I see them. When the weather is wet, the flowers can get pretty bedraggled. But the threads inside the flower are usually OK. Regardless of the weather, I go out every day and pick the Saffron flowers that are ready over a two- to three-week period. Once the Saffron flowers are done flowering, I cover the whole area with a layer of wood chips. And they are good to go for the rest of the year. I have them planted in a spot that gets the hot afternoon sun. And they don't even want any water, through the whole dry summer here in western Oregon. That's because they go dormant and lose their leaves and disappear during the summer. If you grow Saffron Crocus and have any tips, let me and everyone else know in the comments below. - Processing Saffron Threads After Harvest Once I've picked the flowers, I need to get the Saffron threads out and dried. It's an easy process. I just pull the Saffron threads out, put them on a plate, and let them dry out of the direct sunlight. Every year, the number of flowers seems to triple. And as my crop of Saffron threads has gotten larger and larger, I realize growing and harvesting Saffron spice is not a practical retirement plan, even though Saffron threads sell for a good price! I'm not going to process hundreds of thousands of these Saffron threads over 2 to 3 weeks. I'm happy doing just a few at a time, building up a stock of Saffron threads that will last me for a few months. The flowers have such a pleasant scent that it's a shame to toss them out. So I keep them in a vase for a few days. They fill a whole room with a wonderful aroma. It reminds me of my grandmother. When the Saffron threads have dried out for a few days, I put them in a jar, and store them in my pantry, where it is really dark. So far, my favorites have been Saffron-Braised Celery with wild flowers and wild pin cherries, and Saffron Fingerling Potatoes, with wild chanterelle mushrooms and wild garlic potatoes. - The flowers with the Saffron-Braised Celery are fresh Redbud (Cercis canadensis), Wild Field Mustard (Brassica rapa), and Yellow Deadnettle (Lamiastrum galeobdolon), pickled Elephant Garlic flowers (Allium ampeloprasum). And the cherries are wild pin cherries (Prunus avium). Saffron Fingerling Potatoes: butter and saffron, served over Cherry Tomatoes. The other dishes on the plate use Wild Garlic (Allium vinale) leaves and top-set bulbs with Red Pontiac Potatoes. Hot Cross Buns are a traditional Easter treat here in the UK. Today, I'm making them in a way that also incorporates some elements of a Cornish Saffron bun. For more information about what a Hot Cross Bun actually is, start here: 🤍 Recipe notes: (for a simpler and more traditional version of this recipe, go here: 🤍 ) Ingredients: For the dough: 450g plain flour 7g (about 1 teaspoon) sachet of fast action bread yeast 50g soft brown sugar (you can use white sugar if you can't find brown) 150g dried fruit (raisins, sultanas, currants, candied citrus peel - omit the peel if you don't like it - just use more raisins or some other dried fruit) 2 tablespoons clotted cream (use creme fraiche, or high fat cream cheese or anything rich and creamy) 1 teaspoon ground mixed spice (nutmeg, cinnamon, cloves, ginger) 1 egg 50g butter, melted 250ml whole milk Saffron (a generous pinch) For the crosses Lemon zest, finely chopped 100g plain flour water For the glaze Lemon juice about 5 heaped teaspoons of white sugar Infuse the saffron in the milk, warming it in a pan. Leave to cool to body temperature Mix all of the other dough ingredients in a bowl, add the saffron infused milk; mix thoroughly, then cover and leave for half an hour Turn out the dough and knead it for a minute or two, then return it to the bowl, cover and leave until it has doubled in size Knead the dough again to knock out some of the air, then divide it into 12 pieces. Form each piece into a ball and place them on an oiled tray - leave a little space between them Cover with oiled plastic film and leave until they have doubled in size and are touching each other. Preheat the oven to 200C For the crosses, mix the lemon zest and flour in a bowl, and add just enough water to form a very thick batter - put this in a plastic bag, cut a tiny piece off the corner of the bag and pipe lines of this batter across the buns all at once - forming crosses on each one. Do this immediately before placing in the oven. leave to bake for 20 minutes. Mix the lemon juice and sugar, stir until it's all dissolved. Brush this over the buns as soon as they come out of the oven - while they are still piping hot.

Plus, it can be made vegan with slight modifications. #kesardoodh #saffronmilk #healthydrink - SUBSCRIBE HERE ➔ 🤍 - Click here for the full recipe: 🤍 - Servings: 4 - Ingredients For Saffron Milk ☛ 1 liter whole or full-fat milk ☛ 3-4 tablespoons almond flour or powder ☛ 1.5 tablespoons ghee ☛ 28-30 saffron strands ☛ 2 tablespoons flaked or sliced almonds ☛ 2 tablespoons chopped cashews ☛ 1 teaspoon ground cardamom ☛ 3 tablespoons sugar, or to taste Making Saffron Milk 1. Add 1.5 tablespoon ghee to a saucepan and heat over low heat. Once the ghee is hot, turn heat to low and add almond flour or almond powder. Saute the almond in the ghee until it turns aromatic and fluffy. TIP: Do not let the almond change its color. 2. Once the almond is fragrant, add 1-liter full cream or whole milk. Stir well and let it come to a boil over medium heat. Meanwhile, crush 25-30 saffron strands in mortar and pestle. Keep it aside. 3. Stir often until the milk comes to a boil, it prevents the milk from sticking to the bottom. When the milk comes to a boil, turn the heat to low. Now, add 4-5 teaspoons of boiling milk to the mortar and stir with the pestle. Add this to the boiling milk. 4. Do this one more time to remove all the crushed saffron from the mortar. Let it boil for 7-8 minutes over medium heat. 5. Now add the sugar, and mix well to completely dissolve the sugar. Cook for another 2-3 minutes. 6. After that, add 1 teaspoon ground cardamom, 2 tablespoons chopped cashews, and 2 tablespoons flaked or sliced almonds. Mix everything well and boil for 3-4 minutes. 7. Saffron milk is ready, remove it from the heat. Transfer it to a pitcher or a bowl. Pour the hot saffron milk into serving glasses. Garnish it with saffron, almonds, and dried rose petals.
